【食材101】是否素食者,都要多了解食材屬性

素食寒涼?蔬菜也分寒熱平
對於素食,不少人也有疑問:「素食的材料主要為蔬菜,豈不是很寒涼?」根據中醫理論,所有食材都有其屬性(寒涼、溫熱和平性),蔬菜也不例外,例如苦瓜性寒、節瓜性平、南瓜性熱,只要食材配搭上加以注意,加上多選擇屬性平和的蔬果,進食素食不會導致身體寒涼。
烹調方法亦會改變食材的屬性,煎、炸、炒、焗、燒會使食物變得偏熱;蒸、燉、灼法則不會改變屬性。但凡未煮熟或冰冷的,多是「生冷」食物的定義。
食材屬性不同,亦要配合體質食用,偏熱體質要少吃屬性溫熱的食物;偏寒體質則要少吃屬性寒涼的食物等。根據體質調節飲食就能調整體內失衡狀態,達致健康,免受病邪的侵襲。
寒性蔬菜:苦瓜、冬瓜、老黃瓜、青瓜、芽菜、白菜、菠菜、通菜、番茄、茄子、蘆筍、竹筍、白蘿蔔、馬蹄
平性蔬菜:粟米、佛手瓜、節瓜、紅蘿蔔、薯仔、番薯、芋頭、菜心、芥蘭、椰菜、豆角、紅菜頭
溫熱蔬菜:南瓜、洋蔥、芫茜、韭菜、蔥、薑、蒜頭、辣椒、九層塔/羅勒、茼蒿
Vegetarian diet is not necessarily ‘cold’
A lot of people wonder if a vegetarian diet is comprised of vegetables only, wouldn’t that be too cold? According to Chinese medicine theories, all ingredients have their nature (cold, hot, and mild), and vegetables are the same. For example, bitter melons are cool in nature, hairy gourds are mild, pumpkins are hot. If you are careful with your food combinations and choose mild-natured vegetables, being vegetarian will not lead to body being cold.
Cooking methods can also alter nature of ingredients. Pan-frying, deep-frying, stir-frying, baking, or grilling will make the dish become hot; steaming and boiling does not change the food nature.
Cold natured vegetables: bitter melon, winter melon, old cucumber, cucumber, bean sprouts, bak choy, spinach, water spinach, tomato, eggplant, asparagus, bamboo shoot, raddish, chestnut
Mild natured vegetables: corn, chayote, hairy gourd, carrot, potato, sweet potato, taro, choy sum, Chinese kale, cabbage, bean string, beetroot
Warm/Hot natured vegetables: pumpkin, onion, cilantro, chives, spring onion, ginger, garlic, chili pepper, basil, garland chrysanthemum
