【養生靚湯】冬天多喝潤肺湯滋潤肌膚

金銀菜湯清熱潤肺
白菜雖然一年四季都見到,但冬季當造的出品更為光鮮飽滿,它有清熱除煩、生津利水、通便的功效,煲湯的話通常會配搭菜乾,與白菜合稱為金銀菜,菜乾為白菜曬乾而成,功效與新鮮白菜相若,令湯的味道更濃郁。金銀菜適合秋冬乾燥天氣食用,有效清理臟腑之熱,紓緩因乾燥引起的咽喉發炎、乾咳等症狀。湯水中加入滋陰潤肺的雪耳、潤肺健脾的無花果,有助紓緩乾燥症狀。
清熱潤肺湯水小貼士:
適當地添加清熱潤肺的食材如雪梨、海底椰、花旗參、霸王花等。
金銀菜雪耳馬蹄湯
功效:清熱潤肺,紓緩皮膚乾燥、口乾、眼乾等症狀。
材料:大型白菜1棵、白菜乾40克(約1両)、紅蘿蔔2根、雪耳1朵、馬蹄8粒、蜜棗2枚
做法:
1. 所有材料洗淨,紅蘿蔔去皮切塊;雪耳浸泡至軟身後去蒂;馬蹄去皮,用刀背拍一拍備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

Fresh and dried bak choy soup to clear heat and moisten the lungs
Chinese cabbage, bak choy, can be found throughout the four seasons but the harvests during winter are exceptionally fresh. It can clear heat, relieve stress, stimulate saliva production, and improve bowel movement.
When making soup, bak choy is normally coupled with dried bak choy, hence it is called ‘the gold and silver vegetables’ in Cantonese. Dried bak choy ’s function is similar to that of the fresh ones, but they add more flavor to the soup.
Both fresh and dried bak choy are suitable for consumption during the dry weather in autumn and winter. They can effectively clear heat from the organs, relieve dryness-related symptoms such as throat inflammation and dry cough. Adding some lungs-moistening snow fungus, as well as figs which can also moisten the lungs and strengthen the spleen, into the soup can relieve the dry condition of the body.
Tips for soup to clear heat and moisten lungs:
Appropriately add in ingredients such as pear, palm fruit, American ginseng and night-blooming cereus etc.
Bak choy soup with snow fungus and water chestnut
Effects: Clears heat and moistens lungs. Relieve symptoms of dry skin, dry mouth and dry eyes.
Ingredient: 1 big fresh bak choy, 40g dried bak choy, 2 carrots, 1 snow fungus, 8 water chestnuts, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Peel carrots and cut into pieces. Soak snow fungus in water for half a day until soften, then cut off black bit from bottom. Peel chestnuts.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hour. Add salt to taste.
