子薑 — 性微溫,有暖胃開胃醒肺的功效,主要作為行水及消水腫,多在夏日時吃醃製的子薑來醒胃。

1. 蝦洗淨去頭去殼去腸,用少許鹽及胡椒粉醃味;菠蘿切粒;調味汁材料拌勻備用。
2. 燒熱油鑊,加入蝦仁煎至兩面轉色,盛起備用。
3. 原鑊加少許油,加入蒜蓉、甜酸子薑一同炒香,加入蝦仁及菠蘿,加入已拌勻的調味汁炒勻即可。

Sweet & sour tender ginger can stimulate appetite

“It has been so hot and I have lost my appetite. What kind of dish can stimulate my appetite?”

CheckCheckCin: Summer’s weather is hot and humid which can easily lead to loss of appetite. We can incorporate more sweet and sour dishes into our diet to stimulate the stomach. Sour food induces astringency, can prevent excessive sweating, which may lead to the damage of yin.

Why not pickle some sweet and sour tender ginger? Tender ginger is juicy and not as spicy, suitable to be eaten, it can warm the stomach and the lungs. Other than being served as an appetizer, sweet sour tender ginger is also used to add the sweet and sour flavors in main courses to stimulate appetite.

Tender ginger – slightly warm in nature, can warm and stimulate the stomach as well as the lungs; can promote the circulation of body fluids and reduce water retention. It is best consumed during summer to keep the stomach active.

Pineapple shrimp with tender ginger
Ingredients: 10 shrimps, 50g sweet and sour tender ginger, 4 slices of pineapple, 1 tablespoon minced garlic, salt and grounded pepper to taste
Seasoning: 2 tablespoons ketchup, 1 teaspoon sugar, half teaspoon light soy sauce, 1 teaspoon cornstarch, 1 tablespoon water
1. Remove shell, head and intestine from shrimp, marinate with salt and grounded pepper. Dice pineapple. Mix together seasoning ingredients and set aside.
2. Heat wok with oil, add in shrimp and cook until both sides are golden brown. Set aside.
3. Add oil to same wok and heat, add in minced garlic and tender ginger, stir fry until fragrant. Add in shrimp and pineapples, then stir fry with seasoning.
