1. Rinse all ingredients thoroughly. Cut open and clean fish. Peel and deseed hairy gourds, then cut into large pieces.
2. Pan-fry fish wit hot oil and ginger until both sides of hte fish are slightly browned. Place fish into soup bag.
3. Combine ingredients with 2000ml of water in a pot, and place over high heat until the water boils. Switch to low heat and simmer for an additional 1.5 hours. Add salt to taste.
