【雪耳 vs 黃耳】

秋天宜吃有滋潤功效的食材,雪耳就是其中之一,它能滋陰潤肺,是老少咸宜的潤膚佳品。其實同屬真菌界銀耳科的黃耳滋潤效果一樣高,黃耳又名金耳/金雪耳,性平,補脾胃效能更勝雪耳,特別適合陰虛、血虛、氣虛、陽虛體質人士食用。乾身的黃耳皺褶很多像個小腦袋,煲煮前要先清洗,並且浸泡數小時至軟身才使用,小小的黃耳浸泡後可發大數倍,除了煲湯,黃耳本身帶有淡淡桂花香味,煮糖水同樣美味。要注意寒咳、痰濕及濕熱體質人士都不宜多吃雪耳和黃耳。

木瓜百合金銀耳糖水
功效:滋陰潤燥,滋潤皮膚,紓緩皮膚、咽喉乾燥等症狀。
材料:木瓜半個、黃耳2塊、雪耳1朵、百合15克、冰糖適量
做法:
1. 所有材料洗淨,黃耳及雪耳預先浸泡至軟身,把黑色底部剪掉切碎;木瓜去皮去核切塊備用。
2. 鍋內放1000毫升水,放入全部材料,武火煮至水滾,轉文火煮半小時,加入冰糖煮溶即成。
