【星期五湯水-紅菜頭姬松茸黃耳湯】今天是大年初一,在此祝大家一年身體健康、鴻運當頭、有米過年!年初一家家戶戶多會茹素,我們也推介一道鴻運當頭素湯,能清熱消滯,為新一年帶來一個好開始。

紅菜頭姬松茸黃耳湯
材料:紅菜頭 1個、紅蘿蔔2根、黃耳2朵、姬松茸15克、 眉豆 20克、黃豆 30克、腰果40克、蜜棗3枚

做法:
1. 腰果白鍋炒香備用,其他材料洗淨。紅菜頭去皮,切件;姬松茸用清水浸 15分鐘,浸姬松茸水保留備用;黃耳浸水約半天、去蒂備用。
2. 鍋中加入2500毫升水,放入所有材料,武火煮至水滾,調文火煮1小時,加鹽調味即可。
功效:清熱消滯。舒緩熬夜後、飲食過量的胃脹不適、口乾、疲倦乏力等症狀。

Today is first day of Chinese New Year so we wish everyone good health, good luck in the new year! There are families that are vegetarians on New Year’s Day so here’s a fortune lucky vegetarian soup to clear heat and stagnation and bring a good start to the new year.

Beetroot soup with almond mushroom and yellow fungus
Ingredients: 1 beetroot, 2 carrots, 2 yellow fungus, 15g almond mushroom, 20g black-eyed pea, 30g soy beans, 40g cashews, 3 candies dates
Preparation:
1. Stir fry cashews without oil and rinse all other ingredients thoroughly. Peel beetroot and cut into pieces. Soak almond mushrooms in water for 15 minutes and set side with water. Soak yellow fungus for half a day and remove stem.
2. Combine all ingredients with 2500ml of water and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.

Effects: clears heat and remove stagnation. Alleviate symptoms caused by late nights and over eating such as abdominal bloating and discomfort, dry mouth, and fatigue. @ Checkcheckcin 中醫 · 米水茶飲
