【星期五湯水- 慳家廚餘湯水】

廚餘都可煲靚湯
不少家庭主婦都會有這種煩惱,對於人少少的家庭,煮完一頓飯,就剩下了一大堆不同種類蔬菜,每種剩少少,又或是餘下菜頭菜尾,丟掉又覺得浪費,這時候不妨以這些剩下的蔬菜和廚餘,煲一個營養同樣豐盛的雜菜湯,不浪費又好味!

雜菜素湯
材料:各種不同蔬菜(如椰菜、番茄、西芹、粟米、薯仔、紅蘿蔔、洋蔥等)、茄膏3-4湯匙、月桂葉2片、茄汁少量、洋薏米30克、腰果40克
做法:材料洗淨、去皮切件備用。要菜湯更惹味可以先於鍋內加入適量油,炒香腰果備用。再先炒香茄膏及蔬菜類,於同一鍋中加入約2500毫升水,武火煮至水滾,改文火煮1.5小時,最後下鹽及茄汁調味即可。
功效:開胃健脾。紓緩食慾下降及勞累等症狀。

Kitchen waste can be used to make a great soup
A lot of housewives may have this problem where you have a lot of leftover vegetables after a meal; you just have a little bit of everything, or some heads and ends of various pieces. Throwing them away feels like a waste, try to make a mixed vegetable soup with these left over- it can be tasty and not wasteful!
Mix Vegetable Soup
Ingredients: Different types of vegetables (such as cabbage, tomatoes, celery, corn, potatoes, carrots, onions, etc), 3-4 tablespoon of tomato paste, 2 bay leaves, a bit of ketchup, 30g pearl barley, 40g cashews
Preparation: rinse all ingredients thoroughly, peel and cut into pieces. To make it tastier, stir fry the cashews with some oil and set aside. Stir fry tomato paste and vegetables, then combine with 2500ml of water and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hour. Add salt and ketchup to taste.
Effects: stimulates appetite and strengthens the spleen. Relieves decrease in appetite and fatigue.
