【秋日湯水】家常菜乾湯原來滋陰潤燥

白菜乾湯滋陰潤肺
白菜和菜乾是煲湯的絕妙配搭,合稱為金銀菜,菜乾為白菜曬乾而成,香氣要比新鮮白菜濃郁得多,白菜具有清熱除煩、生津利水、通便功效,配搭平喘止咳的南北杏以及潤肺的無花果,適合秋天乾燥季節飲用。

生津潤肺湯水小貼士:
適當地添加生津潤肺食材如雪梨、沙參、玉竹、百合、雪耳等。

白菜菜乾南北杏湯
功效:滋陰潤燥,舒緩因晚睡、進食煎炸油膩食物而引致的咽痛、口乾、眼乾等症狀。
材料:大白菜1棵、白菜乾40克(約1両)、紅蘿蔔2根、 蘋果1個、南北杏20克、無花果3枚、蜜棗2枚
做法:
1. 所有材料洗淨,蘋果連皮去芯切塊;紅蘿蔔去皮切塊。
2. 鍋中加入約2500毫升水,放入全部材料,武火煮至水滾,調文火煮約2小時,最後下鹽調味即可。

Dried Bakchoy Soup to Nourish Yin and Moisten the Lungs

Bak choy and dried Bak choy are a golden couple for making soup. Bak choy can clear heat and relieve irritability, promote fluid production and diuresis, relieve constipation. When matched with ingredients like bitter and sweet almonds that can relieve cough or figs that can mositen the lungs, it makes for a great soup in the fall.

Tips:
Appropriately add in ingredients to promote fluid production and moisten the lungs. Example are polygonatum, radix glehniae, lily bulbs, and snow fungus.

Bak choy soup with dried Bak choy and bitter and sweet almonds
Effects: nourish yin and relieve dryness, alleviate symptoms related to oily food consumption or late nights such as sore throat, dry mouth and dry eyes.
Ingredients: 1 large bunch of Bak choy, 40g dried Bak choy (about 1 tael), 2 carrots, 1 apple, 20g bitter and sweet almonds, 3 figs, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Peel and core apple and cut into pieces. Peel carrots and cut into pieces.
2. Combine all ingredients with 2500ml of water and cook on high heat until boiling. Turn to low heat and simmer for 2 hours. Add salt to taste.
