【秋天吃甚麼?】大閘蟹三部曲?

在中醫角度來說,大閘蟹實在是不宜多吃的食物因蟹本身屬性寒涼。但相信大家等待了足足一年,而今年的合規格的著名湖泊生長的大閘蟹更是遲遲才到港,愛吃蟹的朋友對於香甜味美的大閘蟹又確是難以忍口!假如你真的要吃大閘蟹,不妨留意以下的食蟹三部曲和注意事項,就可減低吃大閘蟹後有可能出現的不適!

Before大閘蟹:
﹣吃大閘蟹前更要少吃生冷寒涼的飲品和食物如壽司魚生沙律果汁等,否則寒上加寒,身體會招架不住。
﹣蒸大閘蟹時宜加上紫蘇葉,因為紫蘇性溫,可益氣寬中,減少吃完出現胃脹的情況,更可解魚蟹之毒。
﹣孕婦、有感冒症狀、脾胃虛寒易出現腹瀉及胃脹的人,又或是本身有皮膚過敏、膽固醇高和心血管病的人都不宜食用大閘蟹。

大閘蟹ing:
﹣把最寒的六角形的蟹心位置取出,也要清走腮、腸和胃才可食用
﹣不妨與薑醋同吃,由於醋性溫,更有開胃、活血,解魚蟹之毒的功效,可以減低蟹的寒性,稍微紓緩吃蟹後有可能出現的胃脹不適
﹣醋中加入薑絲同吃,有驅寒暖胃的功效
﹣不應與柿、山楂、橙、李子、桃等高鞣質的食物一同食用,否則會出現腹瀉、嘔吐的症狀。而且柿子本身亦很寒涼,才有蟹與柿同服會中毒的說法
﹣吃大閘蟹時不一定要喝酒,雖然酒為溫性,可行氣活血,但多喝會生濕,本身脾胃不好的人喝酒後更易出現濕熱

After大閘蟹:
﹣飲用驅寒的紫蘇生薑紅糖茶:
材料:紫蘇葉9克、生薑5-6片、紅糖適量
做法:乾材料沖淨後以約800毫升水煲煮20分鐘至出味,再加入適當紅糖調味即可。
功效:驅寒、暖胃、鎮吐,可解蟹毒。本身體質偏熱,有咽喉痛及牙肉腫痛的人不宜。

While you’re having hairy crabs:
– Take out the coldest part of the crab which is in the center of the crab and hexagon-shaped, and also remove the cheeks, stomach and intestine.
– Have the crab with ginger vinegar. Vinegar is warm in nature and can stimulate appetite, promote blood circulation, and detoxify the toxins from the crab. It can reduce the coldness of the crab and relieve any stomach discomfort after eating them.
– Add ginger to your vinegar to dispel cold and warm the stomach.
