【星期五湯水-小茴香胡椒牛尾湯】

吃過聖誕大餐,又是時候準備除夕晚飯,有沒有想過以可驅寒的辛香料炮製一道有異國風的牛尾湯?今天就教大家煮一道比較西式的湯水!

小茴香和胡椒都是可驅寒的香料,香氣濃郁又帶有異國風味,加上幾片生薑,既可調味,又有驅風和胃的作用,再加上骨膠原豐富的牛尾,除了湯水美味以外,亦可當作一道風味家常菜,比吃一般的清湯牛腩更有特色!

暖笠笠湯水
材料:小茴香1/2茶匙、胡椒2﹣3茶匙、生薑3﹣4片、牛尾600克(約1斤)
做法:所有材料洗淨,備用。牛尾汆水。小茴香白鍋炒香備用。鍋中加入約2500毫升水,鍋內放入全部材料,武火煮至水滾,改文火煮2小時,最後下鹽調味即可。

功效:暖胃、散寒止痛。有助暖宮舒緩因宮寒而致的痛經、脾胃虛寒、全身怕冷等症狀,但身體有偏熱症狀者不宜飲用。

After Christmas dinner, it’s time to prep for the New Year’s Eve dinner. Have you considered an oxtail soup that’s a bit international with seasoning that can dispel cold? Today we introduce you to this western soup!

Cumin and pepper are both seasoning that can dispel cold and they are both rich in flavor. Added with a few slices of ginger, it’s great tasting and can dispel wind and warm the stomach. Oxtail is also rich into collagen. This soup is delicious and can be made regularly too and it’s a good alternative to the clear brisket soup.
Ingredients: 1/2 teaspoon cumin, 2-3 teaspoon pepper, 3-4 slices of ginger, 600g oxtail (about 1 catty)
Preparation: rinse all ingredients thoroughly. Blanch oxtail. Fry cumin and pepper without oil until fragrant. Combine all ingredients with 2500 ml of water and cook on high heat until boiling. Turn to low heat and simmer for two hours. Add salt to taste.

Effects: warms the stomach, dispel cold and relieve pain. Can alleviate cold uterus related menstrual pain. Improve weak and cold spleen and stomach and aversion to cold. Not suitable for those with heat like symptom.
