蒜頭家族行氣暖胃
蒜頭,一種尋常不過的食材,實在是居家必備。別看它小小的一顆,其實健康功效甚多,從中醫角度看,蒜頭性溫,能暖脾胃、行滯氣;從西方醫學角度來看,它能抗菌消炎、降血脂、健腦及提升免疫力,冬天多吃蒜,可以起到禦寒及預防感冒的功效。
蒜頭、大蒜、蒜芯等「蒜」字黨食材有何關係?其實同樣來自蒜,將蒜埋在泥土中,就會長出蒜葉(又稱大蒜);長至開花期就會變成較硬身的花莖,即是蒜芯;蒜芯枯萎後,留下結實堅硬結成球體的鱗莖就是蒜頭了。
大蒜、蒜芯和蒜頭屬性相若,坊間有說法是每日吃生蒜可保健康,但《本草綱目》曾提及「大蒜久食傷肝損眼」,還是適可宜止好了,而且多吃會大口氣呢!而且蒜屬於發物,容易加重及誘發原有疾病,濕疹、皮膚病及容易過敏人士等不宜服用。

蒜頭 — 性溫味辛,具暖脾胃、行滯氣、降血脂、殺菌功效,適合感冒病人食用,能舒緩初起的風寒感冒、食滯等症狀。由於屬性溫熱,陰虛火旺、身體有偏熱症狀如口瘡、暗瘡、喉嚨痛者不宜食用。
