#立秋】茄子是秋天的食材

立秋養生重點:「清熱養陰,潤燥止渴」

茄子:清熱活血,寬腸通便
味噌:補中益氣,滋養心腎

茄子田樂燒

材料:茄子2個(首選圓茄子)、蔥半條、芝麻及木魚碎少量
味噌醬:味噌2-3湯匙、味醂1湯匙、糖1湯匙、麻油及熱水少量

做法:
1. 茄子及蔥洗淨。茄子切半,以刀?十字紋;蔥切成蔥花備用。
2. 混合味噌、味醂、糖、麻油及少量熱水至醬汁狀備用。
3. 以少量油煎香茄子兩面至微焦。
4. 在茄子面塗上味噌醬,焗爐預熱180度,焗15分鐘。
5. 灑上蔥花、木魚碎及少量芝麻即成。

Healthy living during Beginning of Autumn Solar Term:

Eggplant: clears heat and promotes blood circulation, loosens the bowels to relieve constipation.
Miso: replenishes vital energy and qi, nourishes heart and kidney.

Grilled eggplant with miso sauce

Ingredients: 2 eggplants (round or oval eggplants are preferable), 1 segment of spring onion, small amounts of sesame and bonito flakes
Miso sauce: 2-3 tablespoons of miso, 1 tablespoon of mirin, 1 tablespoon of sugar, small amount of sesame oil and hot water

Preparation:
1. Rinse eggplants and spring onion. Cut eggplants in half and slice in cross pattern. Chop spring onion.
2. Mix miso, mirin, sugar, sesame oil and hot water into paste.
3. Heat the pan with oil, sear eggplants until golden brown.
4. Add miso sauce to eggplants. Preheat oven to 180C and grill for 15 minutes.
5. Serve with spring onion, bonito flakes and sesame.
