「清補涼」為廣東一帶地區的家常湯水,坊間很容易買到預先包裝好的湯料,一般包含淮山、蓮子、芡實、薏米、沙參、玉竹等材料,具清熱、平補及涼潤的功效,故曰「清補涼」。這款湯很適合初夏潮濕天氣飲用,可健脾祛濕,養陰生津,消除潮濕帶來的怠倦感,養好脾胃,祛濕更能事半功倍。煲湯時自行加入瓜果或肉類等材料,即能成為一家大小都適合飲用的美味湯水。

夏日當造瓜類小貼士:
適當地添加夏天當造的瓜類如冬瓜、佛手瓜或節瓜等。

節瓜紅蘿蔔清補涼素湯
功效:健脾益胃,強身防病,適合夏天感覺睏倦,渾身無勁時飲用。
材料:節瓜2個、紅蘿蔔1根、新鮮百合2個、芡實15克、海玉竹15克、薏米20克、乾蓮子20克、蜜棗2粒
做法:
1. 所有材料洗淨,節瓜,紅蘿蔔去皮切塊備用。
2. 鍋內加入約2500毫升水,全部材料加入鍋裡,以武火煮至水滾,調文火煮約1.5小時,最後下鹽調味即可。

Ching Bo Leung soup with hairy gourd and carrot
Effects: strengthens the spleen and nourishes the stomach, strengthens overall health. Relieves fatigue in summer.
Ingredients: 2 hairy gourds, 1 carrot, 2 fresh lily bulb, 15g fox nuts, 15g polygonatum root, 20g coix seeds, 20g dried lotus seed, 2 candied dates

Preparation:
1. Rinse all ingredients thoroughly. Peel chayote and carrot and cut into pieces.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hour. Add salt to taste.
