Friday Soup Series- Winter Melon Soup with Lotus Leaves and Hyacinth Beans
Why is it still so hot even though we’ve entered fall? From a solar term perspective, End of Summer has not yet arrived so the summer heat will linger. It will still be hot in the beginning of Autumn so its important to clear heat and dispel dampness. Winter melon and lotus leaves are ingredients that help to clear heat and the taste is refreshing and not strong, perfect for the current weather.
Winter Melon Soup with Lotus Leaves and Hyacinth Beans
Ingredients: 600g winter melon (about 1 catty), ½ fresh lotus leaf (about 20g dried lotus leaf), 15g Chinese yam or fresh smilax, 15g dry-fried hyacinth beans
Preparation: Rinse all ingredients thoroughly. Keep skin on winter melon and cut into pieces. Combine ingredients with 2000ml of water in a pot, and place over high heat until the water boils. Switch to low heat and simmer for an additional 1 hour. Add salt to taste.
Effects: Strengthen the spleen and clear summer heat. Relieves fatigue, tightness in chest, heaviness in limbs and body swelling.
