滋陰安神蜜味金蠔
過年很多人都會食蠔豉,不過好多人更鍾情只會在秋冬季出現的金蠔,金蠔是新鮮蠔肉起出後曬一至兩天的成品,呈半乾濕狀態,與需要曬上一個月的乾身蠔豉滋味不同。從中醫角度來看,蠔屬性平和,有滋陰養血、補心安神的功效,尤其適合煩熱、失眠者食用。

蠔 — 性平,滋陰養血、補心安神,適合陰虛、煩熱、失眠、心神不安者食用。惟注意患有慢性皮膚病如濕疹人士不宜多吃。

蜜味煎金蠔是一道做法簡單而賣相得體的宴客菜,15分鐘就可完成,金蠔本身帶有海鮮的鹹香味,所以簡單用蜜糖調味已經足夠。

蜜味煎金蠔
材料:金蠔8隻、薑10片、蔥段、紹興酒1茶匙、老抽1茶匙、蜜糖2-3湯匙

做法:
1. 金蠔洗淨,鋪上薑片及蔥段隔水蒸5分鐘,取出瀝乾備用。
2. 鑊中燒熱少許油,加入金蠔,用文火煎至兩面金黃色後熄火,夾起備用。鍋中加入紹興酒、老抽及蜜糖煮至濃稠。加入金蠔攪拌均勻即可。

Ingredients: 8 golden oysters, 10 slices of ginger, chopped spring onion, 1 tablespoon Shaoxing wine, 1 teaspoon dark soy sauce, 2-3 tablespoons honey

Preparation:
1. Rinse the golden oysters, place the ginger slices and chopped spring onion on them and steam for 5 minutes. Take out and drain for later use.
2. Add some oil into a heating wok, then add the golden oysters, and fry them until both sides are golden then set aside. Add Shaoxing wine, dark soy sauce and honey to the wok and cook until sauce has thickened. Add back golden oysters and stir well.
