1. 所有材料洗淨。西洋菜很易藏有小昆蟲,應用鹽水泡二十分鐘,再用水沖水備用。青木瓜去皮去籽備用。
2. 鍋中加入約2500毫升水,放入全部材料,武火煮至水滾,改文火煮1小時,最後下鹽調味即可。

Soup to clear heat and relieve indigestion- watercress soup with green papaya and sweet and bitter almonds
There’s a lot of over eating during the Chinese New Years which can lead to abdominal bloating and feeling of stuffed. These little issues can be quite annoying zapping your energy away. Try eating less tonight and have this soup.

Ingredients- 1 bunch watercress (about 1 catty), 1 green papaya, 40g sweet and bitter almonds, 40g soy beans, 1 dried citrus peel, 10g wolfberries, 3 candied dates
1. Rinse all ingredients thoroughly. Watercress is prone to having small bugs, so soak them in salt water for 20 minutes then rinse with clean water again. Peel and seed green papaya.
2. Combine all ingredients with 2500ml of water and cook on high heat until boiling. Then turn to low heat and simmer for 1 hour. Add salt to taste.

Effects: moistens the lungs, clears heat and relieves stagnation. Alleviates symptoms of decreased appetite, abdominal bloating, dry mouth, sore throat and heat-related symptoms.
