1. 柚子去皮去筋膜,留起部分果肉榨成柚子汁備用,其餘果肉撕成大塊。
2. 竹笙洗淨;雞洗淨切件汆水備用。
3. 鍋中加入2000毫升水,放入柚子肉及雞肉,武火煮至水滾,撈起湯面飄浮的雜質,調文火煮1小時後加入竹笙,多煮30分鐘。
4. 最後加柚子汁及下鹽調味,可加入切好的京蔥及配以柚子醋同食。

Yuzu: clears heat and relieves indigestion, nourishes qi and clears phlegm
Bamboo fungus: Nourishes qi and replenishes asthenia, lowers blood lipids and aids weight loss

Chicken soup with yuzu and bamboo fungus

Ingredients: 1 yuzu (or pomelo), 30g bamboo fungus, 1 chicken, 2 slices of ginger, 1 segment of leek, salt and ponzo

1. Peel and remove thick rind and membrane from each segment, squeeze 1 bowl of yuzu juice and set aside, tear the rest of yuzu into big bites.
2. Rinse the rest of the ingredients. Chop up leek. Rinse and blanche chicken.
3. Combine yuzu and chicken with 2000ml of water in a pot, cook on high heat until boiling. Skim the soup and turn to low heat and simmer for 1 hour. Add bamboo fungus and cook for additional 30 minutes.
4. Add fresh yuzu juice and salt to taste, may serve with chopped leek and ponzu.
