立夏養生重點:「清心降火,健脾袪濕」

瑤柱白玉冬瓜環

冬瓜:清熱解毒,利水減肥
帶子/瑤柱:滋陰補腎,調補脾胃

材料:冬瓜600克(約2厘米厚環)、急凍帶子3-4粒(如用小粒的,數量可增加)、瑤柱2粒(或可用瑤柱碎)、冬菇3朵、上湯250亳升、生粉少量、鹽及胡椒粉少量

做法:
1. 冬瓜洗淨去皮去瓤,挖空中間放在蒸碟上
2. 冬菇浸軟去蒂切細粒,瑤柱浸軟撕成絲,瑤柱水留起備用
3. 急凍帶子解凍,切細粒備用
4. 把已準備好的帶子及冬菇粒放在冬瓜環中,瑤柱絲放面
5. 淋上一半的上湯以中大火蒸約30分鐘至瓜肉呈透明
6. 鍋中注入餘下的一半上湯及瑤柱水加熱,加入生粉水打芡,加適量鹽調味
7. 將芡汁淋在蒸好的冬瓜環上,灑上少量胡椒粉調味即成

Steamed winter melon ring with scallop

Winter melon: Clears heat and detoxifies, dispels dampness and burns fat.
Scallop: Nourishes yin and replenishes kidneys, nourishes spleen and stomach.

Ingredients: Winter melon 600g (2cm thick ring), 3-4 frozen scallops (more quantity may need for smaller sized scallop), 2 dried scallops, 3 Shiitake mushrooms, chicken stock 250ml, cornstarch, salt & pepper to taste

Preparation:
1. Rinse the winter melon, peel and remove the seeds and pulp, put the water melon ring on a shallow plate.
2. Soak the dried mushrooms and dried scallops in water, remove the stalks of the Shiitake mushrooms and dice into small pieces. Tear the soaked dried scallops apart into thin shreds and keep the water.
3. Defrost the scallops and dice into small pieces. 
4. Put the scallop and Shiitake mushroom dices into the center of the winter melon ring, and garnish with the dried scallop stripes.
5. Pour half of the chicken stock on the winter melon ring and steam on medium to high heat for 30 minutes until soft and transparent.
6. Heat the rest of the chicken stock and dried scallop water in a pan, add the mixture of cornstarch and water to thicken, add some salt to taste.
8. Dress the steamed winter melon ring with the sauce, add some pepper to taste.
