1. 材料洗淨,芽菜摘去尾部(或直接買銀芽);韭菜切段;紅椒切幼絲;雞胸肉切絲,加入雞肉醃料醃最少15分鐘。
2. 燒熱油鍋,加入雞絲炒至八成熟,盛起備用。
3. 同一個鍋加少許油,加入芽菜用大火快炒30秒,再加入韭菜、紅椒及雞絲翻炒一會,加入生抽及糖炒勻即可。

Bean sprouts: clears heat and dispels dampness, promotes diuresis and relieves water retention
Chives: warms the kidney, invigorates the yang, clears stasis, and invigorates the blood

Fried shredded chicken with bean sprouts and chives
Ingredients: 1 piece chicken breast, 200g beansprouts, 50g chives, 1/4 red chili, 1 tablespoon soy sauce, 1/2 teaspoon sugar
Chicken marinade: 1 teaspoon soy sauce, 1/2 teaspoon sugar, 1/2 teaspoon corn flour, some pepper powder and sesame oil

1. Rinse all the ingredients. Remove the end of the beansprouts (or you can buy those that have their ends removed); chop the chives into sections; slice the red chili in thin stripes; shred the chicken breast and dip the meat in the marinade for at least 15 minutes.
2. Heat the frying pan with oil. Add in the shredded chicken and stir-fry until medium well. Place the shredded chicken on a plate.
3. Add some oil to the same pan, and stir fry the bean sprouts over high heat for 30 seconds. Then add in chives, chili, and shredded chicken, and fry the mixture. Add in some soy sauce and sugar. The dish is ready to serve.
