#清明】清明佳節倍思親

清明養生重點:「健脾祛濕,疏肝解鬱」

麻醬拌秋葵鮮淮山

秋葵:清熱降火,潤燥護胃
淮山:健脾養胃,補氣生津

材料:秋葵10條、鮮淮山1條、日式麻醬適量、炒香芝麻少許

做法:
1. 秋葵洗淨,用粗鹽刷洗去掉表面絨毛;鮮淮山去皮切條,浸水防止氧化。
2. 煮滾一鍋水,加入秋葵煮2分鐘,撈起浸在凍水一會,然後瀝乾,可自行選擇原條上或是切成粒。
3. 同一鍋水煮滾,加入鮮淮山煮2分鐘,撈起浸在凍水一會,然後瀝乾。
4. 將淮山及秋葵排在碟上,淋上日式麻醬,灑上芝麻即成。

Okra and Chinese yam with sesame dressing 

Okra: Clears heat, relieves dryness and nourishes the stomach.
Chinese yam: Strengthens the spleen and nourishes the stomach, and moistens the lungs.

Ingredients: 10 okras, 1 Chinese yam, Japanese sesame dressing, toasted sesame, coarse salt

Preparation:
1. Rinse the okra, use coarse salt to scrub off the fluff. Peel Chinese yam and cut into stripes, put into cold water to avoid oxidation.
2. Bring water to a boil, cook okras for 2 minutes, drain and shock in cold water bath to quickly stop the cooking process to preserve the green colour. You may choose to cut okra into bite sizes.
4. Bring water to a boil, cook Chinese yam for 2 minutes, drain and shock in cold water bath.
5. Serve the cooked okras and Chinese yam on serving dish pour with sesame dressing and garnish with toasted sesame to serve.
