鹹蛋:滋陰 降火

1. 材料洗淨,苦瓜去瓤後切薄片,加一茶匙鹽醃約5分鐘,倒走水份,洗淨瀝乾。鹹蛋蒸熟,分開蛋黃和蛋白切碎備用。
2. 燒熱油鑊,加入薑蓉爆香,加入鹹蛋黃炒至起泡沫。
3. 加入苦瓜拌炒至平均裹上鹹蛋黃,加入鹹蛋白及糖炒勻。
4. 加入少許水煮至苦瓜軟腍並收乾水即成。

Bitter gourd with salted egg
Ingredients: 1 bitter gourd, 1 salted egg, some minced ginger, sugar to taste

1. Wash all ingredients thoroughly. Remove the pith and slice the bitter gourd into thin pieces. Marinate them with a teaspoon of salt for about 5 minutes. Pour out the excess water and rinse. Steam the salted egg, separate the hardened yolk and white after steaming, and chop them into fine bits.
2. Heat wok with oil and fry the minced ginger. Add in the smashed salted egg yolk and fry until it becomes foamy.
3. Add in the bitter gourd slices and make sure they are evenly coated with the yolk. Add in the egg white and sugar and fry the mixture.
4. Add some water and cook until the bitter gourd slices turn soft and the excess water has evaporated. Ready to serve.
