1. 材料洗淨,西洋菜以鹽水泡約20分鐘去除小昆蟲再沖水備用;粟米及紅蘿蔔去皮切段;金羅漢果輕壓備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

Watercress soup for clearing lung heat

If you frequently experience a persistent cough with yellowish phlegm, along with symptoms like dry mouth, sore throat, dark urine, and constipation, these are indicative of lung heat according to traditional Chinese medicine. Individuals who smoke, consume alcohol, and regularly eat spicy and heaty foods are more susceptible to developing these symptoms.
In more severe cases, it is advisable to consult registered Chinese physicians for proper treatment and guidance. Drinking watercress and monk fruit soup can also be beneficial as it helps in clearing heat and nourishing the lungs, thereby relieving and preventing such symptoms.

Watercress and monk fruit soup
Effects: Clears the heat and lung, relieve phlegm and cough. Alleviates symptoms of excessive thirst, excess fire.
Ingredients: 600g watercress(1 catty), 2 carrots, 1 corn, 1 golden monk fruit, 30g cashew
1. Rinse all ingredients thoroughly. Watercress is prone to small insects so soak in salt water for 20 minutes, then rinse again with water. Peel and cut the corn and carrot into pieces. Slightly press the golden monk fruit.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hours. Add salt to taste.
